Good luck! This is not a trivial task.
First, it will be obvious how to remove the door cappings once the door panel / map pockets are removed (use a plastic lever specifically designed for this to pry away the clips.
All the cappings are a thin veneer over a lightweight wood, and with chip boards ends. They are quite fragile. The wood pieces come apart, the chipboard degrades, and the veneer peels off. I made the mistake of using too strong a varnish stripper on mine, and lifted the veneer in places.
If you have a coupe, drift out the aluminium trip from the door cappings. You cannot do a decent job with them in place.
Thin 2 pack slow setting epoxy is what you need to reglue the veneer and strengthen the cappings before working on them. When rubbing down (by hand with 120 grit) do so gently as it is very easy to sand through the veneer.
There is an excellent thread on re-veneering all the woodwork, use search.
