I have a wire on the sensor for the temperature gage, but also have a second sensor, which I have no idea what it is for. It is in the centre of the little plate held on with three bolts just in front of in air intake. Could anyone help with this?

It's called an "otter switch" and it's the temperature control for a manual choke warning light.

You also need the switch thats fits on the choke cable

Above the two warning lights on the console - its even marked on the back so if you get the proper yellow fitting from David Green its only a matter of drilling the correct sized hole. That is waht I have done
Alternativley get a complete P5B early console and it will be fully marked up with names and in this case the yellow light is on the right and ignition at the top of the triangle
The Otter switch operates only (closes) when the coolant warms up a little which if the choke is pulled out past the fast idle position will light up the lamp.
In reality it should have been pushed in much earlier as its only a reminder that its too late and not the correct time
